Spinach and Feta Scrambled Eggs

Ingredients (for 4):

  • 4 large eggs
  • 2 cups fresh spinach, roughly chopped
  • 50g feta cheese, crumbled
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: A pinch of chilli flakes for some heat


  1. Preparation: Wash the spinach thoroughly and chop it roughly. Crumble the feta cheese.
  2. Cooking the Spinach: In a non-stick pan, heat the olive oil over medium heat. Add the spinach and sauté for 2-3 minutes until it wilts. Season with a little salt and pepper.
  3. Scrambling the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Pour them over the wilted spinach. Let it sit without stirring for about 30 seconds, then gently stir with a spatula to form soft curds.
  4. Adding Feta: When the eggs are mostly set but still slightly runny, sprinkle the crumbled feta over them. Cook for another minute, allowing the feta to slightly melt.
  5. Serving: Remove from heat while the eggs are still moist. Optionally, sprinkle some chilli flakes for extra flavour.
